A veritable gastronomic jewel, because each piece is unique: the height of the union of the best raw material, the pure breed pig raised in the best dehesa fields, and the natural curing in our cellars in Guijuelo.

Time is an ally only for those who can wait: two years of living in freedom, in the dehesa fields, with two seasons to guarantee a double acorn-based feed and its healthy nutritional properties; then, a minimum of 48 months’ curing in Guijuelo, in natural drying sheds, where the cold, dry wind of the Béjar and Gredos mountains do the rest.

Every day is different, a true challenge, and only the deepest knowledge gathered over more than a century of experience by a family who loves their work can guarantee that the 100% Iberian cured acorn ham that reaches your table is unique among the Iberian hams: the essence of a pure, balanced, full flavour. INGREDIENTS: 100% iberico acorn-fed pig, salt, sugar, preservative (E-252), antioxidant (E-301) and acidity regulator (E-331iii).

Tasting Notes

ASPECT

  • Shiny and even, with excellent grease coverage.
  • Slices of deep red mottled with thyroxine, the amino acid that crystallises as a reflection of excellent curing.

SMELL

  • Powerful, pleasing, specific, attractive aromas.
  • They remain long, very frank and clear.
    In the background, it presents very sincere notes of fresh nuts.

TEXTURE

  • Juicy texture, very pleasant in the mouth.
  • Tender yet firm: preserves its structure during chewing.

TASTE

  • Fine, personal, balanced, tasty. It is an elegant ham that permeates its fundamental flavours already on the palate.
  • Its excellent balance in salinity reveals the right sweet notes, light and clear, which precisely nuance the characteristic points of bitterness.

Pairing

Vino fino, manzanilla de Jerez, light blonde beer or young white vermouth from Reus are good accompaniments for Arturo Sánchez acorn-fed Iberian ham.

IBERIAN ACORN-FED ACORN-FED HAM (75 % R.I.) ARTURO SANCHEZ

Our 75% Iberian breed acorn-fed pigs reach 18 and even 20 months of age. They are half a year older than the Iberian pigs normally used in this category and this is what allows them to have a double “montanera”.

For this reason, they achieve this complete muscular and skeletal development, always in the pasture, running free and feeding on the extraordinary acorns of holm oaks and cork oaks.

In this way, they put on or replenish up to 70 kg in the second “montanera” (fattening period). From these pigs come our 75% Raza Ibérica acorn-fed Iberian hams, which are cured for a minimum of 36 months, always in our natural drying sheds and cellars in Guijuelo.

Available in these formats: whole piece, boneless and sliced.

IBERIAN CEBO DE CAMPO HAM (50 % R.I.) ARTURO SÁNCHEZ
